So much fun happened for the Kirk family last month. We gifted our recent college grads with a trip to Kauai...and here's what happened.
You know it's going to be a great trip when your aircraft puts off "party plane" vibes! It was a loooong flight, but worth it. The first few days were full of stunning sunrises & sunsets, great food, snorkeling, swimming, a full moon, and so, so, so many wild chickens!
Two days in, the first member of our party succumbed to covid. By day four, myself & kid #1 tested positive and joined Mr. Kirk in the "sick room." The good news is that Kids #4, #5, and GF-of-#4 did not get it! They took excellent care of those of us who apparently have weaker constitutions, though, delivering our meds and meals daily for the rest of the trip. Thank you, my loves! XOXO
Despite being sick, we still managed to discover some amazing places to eat on Kauai. Here's the list of our favorites:
Collab Coffee (Kapa'a) - Highly recommend (and LOVE!) their Coconut Dulce de Leche Latte. I had it with oat milk, even though I'm a whole milk fan. Yum!
L&L Hawaiian Barbecue (Lihue & Kapa'a) - I loved their fried shrimp. Other favorites from my family include the loco moco, BBQ chicken bowl, & chicken katsu.
The Musubi Truck, Original (Kapa'a) - Go to the original in Kapa'a. It's literally a food truck with a foundation! The Chicken Katsu was my personal fave here.
Chicken in a Barrel (Waimea) - No, seriously. Don't judge this place by the name or you'll miss out! Everything we ordered was delicious! <cheese burger sliders> ;-)
Duke's (Lihue) - The food is yummy and the patio is great on a muggy evening. Also, don't miss out on the Hula Pie. It's HUGE!!
But wait, there's more! Things we did...
Kilohana Plantation Train (Lihue) - I didn't go on this, but Mr. Kirk and the healthy kids did and said it was fun.
Kauai Coffee plantation (Kalaheo) - We did the self-guided tour, which was nice. This is the first place I've found that has my favorite coffee "flavor", caramel-coconut. I bought a bag to taste test against the one I've been drinking for years from Ka'u Coffee Mill on the big island.
Drove the Waimea Canyon because we were too tired to hike, and that evening was when I tested positive. Loved the drive!
There's a tubing place on the island that we really wanted to go to but they were booked up for the entire time we were there. So, next time!
